Vegetable Biryani: A Fragrant Delight from India

  • Green chilies, slit lengthwise:  2 
  • Piece of ginger, minced:  1-inch 
  • Garlic, minced:  4 cloves 
  • Mixed vegetables (potatoes, peas, carrots, cauliflower, etc.):  2 cups 
  • Plain yogurt:  1/2 cup 
  • Cumin seeds:  1 teaspoon 
  • Garam masala:  1 teaspoon 
  • Turmeric powder:  1 teaspoon
  • Red chili powder (adjust to taste):  1 teaspoon 
  • Salt, to taste
  • Fresh cilantro leaves, for garnish
  • Fried onions, for garnish
  • Saffron strands soaked in warm milk, for garnish (optional)

Instructions:

  • In a big pot, warm up some vegetable oil or ghee over medium heat. When the onion is caramelized and golden brown, add it and simmer it.
  • When aromatic, add some minced garlic, ginger, and green chilies to the pot and sauté for one minute. 
  • When the mixed vegetables begin to soften, add them to the pot and sauté for one minute. 
  • Add the basmati rice that has been soaked and rinsed, then mix in the yogurt, cumin seeds, red chili powder, turmeric powder, garam masala, and salt. 
  • Add enough water to the rice to cover it by about one inch. After bringing the mixture to a boil, lower the heat to a simmer, cover it, and let it stew for 15 to 20 minutes, or until the veggies are soft and the rice is fully cooked.
  • When finished, take the pot off the burner and cover it to let the flavors settle for a few minutes. 
  • Using a fork, gently fluff the biryani and move it to the serving dish. 
  • If preferred, top the vegetable biryani with fried onions, fresh cilantro leaves, and milk infused with saffron.
  • Enjoy the tasty and aromatic vegetable biryani while it’s still hot.
