Instructions:

For the Rainbow Cake Layers:

  • Set your oven to 350°F (175°C) for preheating.
  • Take six round cake molds, line them with butter paper, and grease them properly.
  • Take a medium bowl and beat together the salt, baking powder, and flour. Set it aside.
  • Take another large bowl and mix together the granulated sugar and softened butter until light and frothy, which takes about 2–3 minutes.

  • Transfer each colored batter into its separate cake mold and spread it lightly.
  • Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the middle comes out spotless. Take out the cakes from the oven and let them cool in the molds for 10 minutes before shifting them to a wire stand to cool entirely.

For the Cream Cheese Frosting:

  • In a large mixing bowl, beat the butter, softened cream cheese, and butter together until smooth and creamy.
  • Slowly add the vanilla extract and powdered sugar, beating until the frosting is light and frothy.

Assembling the Rainbow Cake:

  • Stack all the cake layers in rainbow order and spread a thin layer of cream cheese frosting in the middle of each layer.
  • Decorate the top and sides of the cake with the left-over cream cheese frosting, forming an even and smooth surface.
