  • Feta cheese, crumbled: 1/2 cup
  • Mozzarella cheese, shredded: 1/2 cup
  • Chopped parsley: 1/2 cup
  • Chopped green onions: 1/2 cup
  • Ground black pepper: 1 teaspoon
  • Ground cumin: 1 teaspoon
  • Ground red pepper (optional, for spice) : 1/2 teaspoon
  • Vegetable oil for frying

Instructions:

For the Dough:

  • Take a large bowl and mix the salt and all-purpose flour.
  • Slowly add the water and 2 tablespoons of vegetable oil, mixing until a dough forms.
  • Knead the dough for about 5-7 minutes until it becomes elastic and smooth.
  • Cut the dough into small pieces by using a golf ball-sized cutter, and arrange them on a tray. Cover them with a clean cloth and give them a half-hour to rest.

For the Filling:

  • In another bowl, mix the shredded mozzarella, crumbled feta cheese, chopped green onions, chopped parsley, ground cumin, ground black pepper, and ground red pepper (optional). Mix well to make the filling.

Assembling the Mutabak:

  • Using a floured board, take any of the dough balls and roll them into a very thin, nearly transparent sheet. To do this, a rolling pin can also be used. It ought to look like a dinner plate in size. Brush the sheet with melted butter properly.
  • Spread the spoonful of herb filling and cheese onto one half of the sheet, leaving a boundary around the edges.
  • To create a half-moon, fold the remaining half of the sheet over the filling. Seal the mutabak by pressing the edges.
