Ingredients:

  • Fettuccine pasta:  12 ounces (340g) 
  • Boneless, skinless chicken breasts, cut into bite-sized pieces:  2
  • Olive oil:  2 tablespoons
  • Butter:  4 tablespoons
  • Garlic, minced:  4 cloves 
  • Heavy cream:  1 cup (240ml) 
  • Grated Parmesan cheese:  1 cup (100g) 
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  • In a large saucepan of salted, boiling water, cook the fettuccine pasta according to the package instructions until al dente. After draining, set it away.
  • Heat the olive oil in a big skillet over medium-high heat. After adding the chicken pieces, heat for 6 to 8 minutes, or until they are cooked through and have a golden brown color. After taking the chicken out of the skillet, set it aside
  • melt the butter in the same skillet over medium heat. Add the minced garlic and cook, stirring, for one to two minutes, or until aromatic.
  • Add the heavy cream and bring to a moderate simmer while stirring all the time.
  • Gradually add the grated parmesan cheese to the skillet, stirring constantly, until the cheese melts and the sauce becomes creamy and smooth.
  • Add salt and black paper to taste when preparing the Alfredo sauce.
  • After cooking, add the chicken back to the skillet and toss to ensure that the Alfredo sauce coats it evenly.
  • When the fettuccine pasta is cooked, add it to the skillet and gently toss it around to coat it well with the creamy sauce. 
  • If preferred, remove the skillet from the heat and sprinkle chopped fresh parsley over the chicken Alfredo pasta.
