  • In a large skillet, heat vegetable oil or ghee over medium heat. When the cumin seeds begin to crackle, add them and continue to sauté.

  • Simmer the channa masala for ten to fifteen minutes, stirring now and then, until the sauce thickens and the flavors combine.
